Pueblo, Colorado: History, Culture, and Pueblo Chile

Located along the Arkansas River in southern Colorado, Pueblo is a city with a character all its own. With a population of about 110,000, Pueblo is one of Colorado’s larger cities and has played an important role in the state’s agricultural, industrial, and cultural history.

Today, Pueblo offers a mix of historic neighborhoods, museums, outdoor recreation, public art, local restaurants, breweries, coffee shops, and community events. It is also well known for something you will find on menus and tables throughout the region: Pueblo chile.

A City with Deep Colorado Roots

Pueblo’s history stretches back to the establishment of Fort Pueblo, a trading post along the Arkansas River in 1842. The arrival of the railroad in the 1870s helped transform the community, and in 1886, Pueblo, Central Pueblo, and South Pueblo consolidated to form the modern city.

The city’s industrial history is closely connected to the Colorado Fuel and Iron Company, or CF&I. Founded in Pueblo in 1882, the company helped establish the city as the “Steel City of the West” and made Pueblo an important center of steel production in the American West. Today, visitors can learn more about this history at the Steelworks Center of the West, which preserves CF&I archives, artifacts, and historic buildings.

Pueblo’s history is also reflected in its diverse communities and neighborhoods, architecture, museums, and downtown area.

The Pueblo Riverwalk

The Riverwalk, Pueblo, CO

One of the most recognizable places in downtown Pueblo is the Historic Arkansas Riverwalk, often called HARP. The 32-acre waterfront destination brings together walking paths, public art, restaurants, shops, events, and water activities.

The Riverwalk has an interesting history of its own. The Arkansas River was diverted from downtown after the devastating 1921 flood, and the Riverwalk project helped return water to the heart of the city.

Pueblo Chile: A Local Tradition

It is difficult to talk about Pueblo without mentioning its famous chile.

Pueblo chile is grown in the region and has become an important part of the city’s identity and food culture. During chile season, you can find roasting stands and fresh peppers throughout the area, and Pueblo chile appears in everything from traditional dishes to burgers, sandwiches, breakfast plates, and other local specialties.

One dish visitors may encounter is the Pueblo Slopper—a burger or cheeseburger covered in green chile and other toppings. The dish has become closely associated with Pueblo’s food culture, and several local restaurants have their own versions.

Colorado State Fair

Another major part of Pueblo’s identity is the Colorado State Fair.

The fair dates back to 1872, making it one of Colorado’s long-running annual traditions. Over the years, it has grown into a major event featuring agricultural exhibits, livestock, entertainment, concerts, food, competitions, and carnival attractions.

The Colorado State Fair continues to take place in Pueblo each year, bringing visitors from across Colorado and beyond.

Museums, Arts, and Culture

Pueblo has plenty to offer beyond its industrial history.

Leonardo da Vinci Museum of North America, Pueblo, CO

The city is home to museums covering everything from local history and aviation to art and science. The Creative Corridor brings together galleries, museums, public art, music, and other creative activities in and around downtown Pueblo.

One of the city’s newer attractions is the Leonardo da Vinci Museum of North America, located along the Historic Arkansas Riverwalk. The museum celebrates the Renaissance artist and inventor through interactive exhibits and models inspired by his inventions and designs.

The Pueblo Zoo is another family-friendly attraction. Located in City Park, the zoo covers 25 acres and is home to more than 400 animals.

Outdoor Recreation

Pueblo’s location along the Arkansas River also gives residents and visitors opportunities to enjoy the outdoors.

Lake Pueblo State Park, Colorado

Lake Pueblo State Park, located west of the city, surrounds a 4,600-acre reservoir and has about 60 miles of shoreline. The park includes more than 400 campsites, numerous trails, picnic areas, and designated areas for boating and fishing. A major landmark is Pueblo Dam, which is about 10,500 feet long and 200 feet high. The dam helps provide water for drinking and irrigation, as well as recreation and flood control.
